Browned Butter.
I don't know who came up with this idea but it is truly brilliant. I made a browned butter raspberry tart this evening for probably the dozenth time (fab recipe) but this time I actually browned the butter properly, for the first time ever, and it's amazing what an impact it had on the flavor! I think I usually chicken out and think that it's taking too long to brown so I'm probably doing it all wrong and just burning it but patience pays off in this situation (and probably many others as well, I should try it more often). Actually, the tart is still in the oven but I licked the spatula and it was pretty fantastic. Just thought you should know about that.
